The bike in the video is a trek 820 that was set up with v brakes. Don t expect to see some different method of braking any time soon. This can be pretty scary flying downhill and not having the control you d like. The disc brakes i used are avid.
Yes there are rack mounts. No they would not be strong enough along to hold the disc caliper. By the time you add everything in including front and rear brakes and the added weight of the disc specific hubs you end up with around 150 to 350 grams additional weight to the whole bike. It will be more cost effective in the end.
